Thanksgiving is a time for giving thanks, enjoying warm meals and good company. What better way to ring in the holiday with a home made recipe that adds new flavor to the table. This recipe is called “loaded cauliflower” and below is a how-to recipe with instructions so you can make this right at home!
This low carb dish is perfect and delicious. Ingredients you will need are as follows; one large head of cauliflower, six to eight strips of bacon, six tablespoons of chopped chives, a half of a cup of mayonnaise, a half of a cup of sour cream and two cups of colby jack cheese (you can use cheddar as a replacement if you’d like). With your six to eight strips of bacon, you want to crumble the bacon and cook it in the oven for 20 minutes at 400 degrees. The bacon flavor gives a nice hint to the cauliflower!
Before you start to mix the ingredients, preheat your oven to 425 degrees to warm it up. Then in a large cooking pot, boil your water and cook the cauliflower for eight to ten minutes. The more chopped your cauliflower is, the better it tastes and this gives it a mashed potato like consistency. After you have cooked your cauliflower, drain it in a colander and let it remain on the counter to cool.
In a large mixing bowl combine all of your ingredients. You will combine your cauliflower pieces, one half of your crumbled bacon, chives, mayonnaise, sour cream, and colby jack cheese. Mix all of these ingredients well. The creamier and smoother the consistency, the better it will taste! You will now place your ingredients in a baking dish and finish it off by covering the top with more colby jack or cheddar cheese if you desire. You will also place the remainder of the crumbled bacon on top of your dish as well.
Place the dish in the oven and bake it for 15 to 20 minutes. Be careful not to let itburn, you want to bake it until the cheese is melted, making sure the dish doesn’t come out too dry. For an appealing presentation, sprinkle the remaining chives on top of the dish, dig in and enjoy!
