On March 13th, I decided to get a little bit crafty when it came to being in the kitchen and cooked some dinner. The recipe is from the popular food tutorial account “Tasty” on Facebook. This recipe will have you wanting more. It is melt-in-your-mouth delicious!
Below is a list of items you will need to get this recipe started:
• 4 thinly sliced boneless chicken breasts. (If you happen to get thick chicken breasts you can slice them yourself, I prefer this way and have done so for this recipe to make more chicken roll ups)
• 2 garlic cloves
• Shredded Parmesan cheese
• Ricotta (1/2 cup)
• Seasoned breadcrumbs
• Spinach (2 cups)
• Mozzarella cheese
• Marinara sauce (From the jar is fine)
• 2 eggs (beaten)
• Salt and pepper
• Olive oil
After you have gathered your items from your pantry or have gone out and purchased them you are ready to begin cooking. This recipe does get a little bit messy with the breadcrumb and eggs. Make sure to wash your hands thoroughly after touching the chicken breasts too!
First, you put the chopped garlic cloves, some olive oil and the two cups of basil in a skillet to cook on the stove. Once the spinach wilts, you will add the ricotta cheese and a handful of Parmesan cheese. You will lightly mix this combination together to get it nice and thick.
After you have added your mixture and have made it thick, you pour this mixture in a bowl. You will then take your chicken breasts and sprinkle salt and pepper on each side of the breasts. With each breast, you will take a tiny spoonful of cheese mixture and place it in the middle of the breast. Then you will roll the breast up and dip each one into the beaten egg and the breadcrumbs making sure that the breadcrumbs completely cover the chicken roll up.
You will bake each roll up in a medium sized baking dish for 25 minutes at a preheated oven temperature of 450 degrees. After they bake for 25 minutes you will simply add some marinara sauce on top of the roll ups, then add your mozzarella cheese slices to bake on top. You will then put the roll ups back in for an additional 5 minutes until the cheese melts on top. When they are done, you will add chopped basil for a delicious flavor and a great presentation. Cut them open, pop them into your mouth and enjoy!
